THERE’S no sound more welcome on a warm day than that of a deliciously refreshing drink clinking over ice cubes. Balmy days call for long, cool drinks, and Pimm’s has become something of a British institution, brought out at parties and summer social events all over the country.

Not dissimilar is this extremely economical September Cocktail mixture. It comes courtesy of our friends Jo and Anthony Broke-Smith, who know a thing or two about a good party.

The Cointreau lends a fortifying glow. Add as much as you think you need. It keeps for ever, so store any left over for next year.

For the purists among you, this simple Green Dancer cocktail is a deliciously sophisticated, clean-tasting drink, the cucumber adding a delicate flavour that marries beautifully with the subtle kick from the vodka. It’s a must if you’re feeling depressed about going back to work.

SEPTEMBER COCKTAIL
Makes three bottles

1 bottle gin
1 bottle white vermouth
1 bottle red vermouth
Slug of cointreau
Ginger ale/lemonade
Lots of mint and chopped fruit

Mix the gin and vermouths together, adding a good slug of Cointreau to taste. Pour into bottles. Pour a measure of the mixture over ice, top up with ginger ale or lemonade and add the mint and fruit.

GREEN DANCER
Serves one

Vodka
Ginger ale
Cucumber

Pour a measure of chilled vodka into a glass. Top up with cold ginger ale and add some slices of cucumber.
